Abstract

Pectins are chemical products obtained from natural raw materials, mainly fruits. They are used in several industries, particularly in food processing, to give gelling, thickening and stabilizing properties. A process, pilot plant scale, is provided to produce pectins from orange peel, by extraction with acidic hydrolysis and precipitation with ethylic alcohol. The product has a good appearance and its gelling properties are similar to those found in other products in the international market. For commercialization of the obtained product, a complete chemical analysis is recommended to fulfill international specifications, that are different according to the use given to the pectins.
