Abstract

The avocado is an edible fruit that has a very voluminous seed which contains a dye, an anthocyanin, which can be extracted and used to dye natural fibers and foods. The process for the extraction of the colorant is described in this article and the parameters to obtain a good yield at the pilot plant level are defined. The preliminary economic analysis of the process suggests that with a moderate investment it is possible to initiate the production of this natural colorant.”
